The Incredible Edible Egg
As I eat my fried egg for breakfast (today's going to be a long day, cereal just isn't gonna cut it), I couldn't help but think about how amazing the egg is. Is there any food more versatile than the egg? I'm not just talking about how it can be boiled, fried, steamed, scrambled, coddled, baked, poached, etc. But add egg to oil, and you get mayonnaise. Whip egg whites long enough and you get meringue. Egg adds flavor, texture, color and elasticity to bread. It allows for the amazing airiness of a souffle. It turns regular old bread into delicious French toast. And you're crazy if you don't agree that adding a poached or fried egg to boring old croque monsieur turns it into a magical, extraordinary croque madame. Eggs are incredible.
